Chicken Fajita Burrito Bowl

Chicken Fajita Burrito Bowl

Bowls have been all the rage! And for many great reasons – they are healthy, easy, and balanced. Not to mention, they are ideal for meal planning & a hit with kids. Load up your bowl with as much or as little as you want, or follow the recipe below. 

Ingredients – Sheet Pan Fajita Chicken recipe:

2 boneless skinless chicken breast

¼ cup taco seasoning

1 tbsp olive oil

1 lime juiced

1 red onion

3 bell peppers, sliced

Ingredients – Chicken Fajita Burrito Bowl Recipe:

2 cups brown rice, cooked

1 can black beans

1 package or batch of guacamole

Sour Cream


Pico de gallo

1. In a large bowl make a marinade using the taco seasoning, olive oil and lime juice. Toss chicken and vegetables in marinade and allow to marinate, covered for 1 hour. 

2. Preheat the oven to 375 degrees F. 

3. Spread ingredients across the pan and bake for 15 minutes, or until meat is cooked through. If you want to add some char to meat and veggies, broil for another 3 minutes.

4. In a bowl spread out rice and top with all desired fixings. Enjoy!

Steak Bites with Sweet Potatoes

Gluten Free

Serves: 4

Prep Time: 20 min

Cook Time: 40 min


If your house is filled with beef lovers, then this recipe is for you! This recipe has less than five ingredients (not including salt + pepper) and is a total crowd pleaser. I mean, can you think of an easier, more delicious skillet dinner that is ALSO a Kid-Friendly Dinner Idea? 


2 lbs. Sirloin steaks, cut into 2-inch pieces

4 tbsp. Olive oil, divided

2 lb. sweet potatoes, peeled and cut into 1-inch cubes

5 cloves garlic, minced

2 tsp. Salt

A pinch of cracked pepper

(Optional) Curry Aioli Ingredients:

¾ cup good quality mayonnaise 

1 clove garlic, minced

1 tsp. Curry powder 

(Optional) 1. In a small bowl mix together mayonnaise, garlic and curry powder until smooth and set aside.

2. Heat 2 tablespoons olive oil in a large cast iron skillet over medium-high heat. Add the sweet potatoes to the pan in a single layer. Let it sit untouched for 3-5 minutes until golden brown. Toss in the pan for an additional 10-12 minutes until fork tender. Remove from pan and set aside. 

3. Season steak pieces generously with salt and pepper.

4. Heat 2 tbsp of olive oil over high heat. Add in steak bites in a single layer, making sure they aren’t touching each other. Cook on high until steak bites are well browned, turn sides and repeat. Continue cooking until all sides are brown. If working in batches, remove the first batch from the pan and cook the remaining steak.

5. Once all the steak is cooked, add both sweet potatoes and all the steak back into the pan along with the garlic and cook for 1-2 minutes until garlic is fragrant. 

6. Serve hot with (optional) curry aioli.

Serves: 4

Have you tried the recipe that practically broke the internet!? At first, it’s easy to be skeptical of how good this dish could be. I mean, it sounds pretty basic, right? It turns out Delish has a new & improved TikTok Baked Feta Pasta recipe that is *chef’s kiss. This is a perfect family-friendly meal that will get the kiddos excited and leave them satisfied.  


2 pt. Cherry or grape tomatoes

1 shallot, quartered

3 cloves garlic, smashed

½ cup extra virgin olive oil – divided

Kosher salt

Pinch of crushed red pepper flakes

1 (8 oz.) block of feta cheese

3 sprigs fresh thyme 

10 oz. pasta

Zest of 1 lemon (optional)

Fresh basil, for garnish

1. Preheat the oven to 400 degrees F. In a large ovenproof skillet or medium baking dish, combine tomatoes, shallot, garlic, and all but 1 tbsp of olive oil. Season with salt and red pepper flakes and toss to combine.

2. Place feta into the center of the tomato mixture and drizzle with remaining 1 tablespoon olive oil. Scatter thyme sprigs over tomatoes. Bake for 40 to 45 minutes, until tomatoes are bursting and feta is golden on top.

3. Meanwhile in a large pot of boiling salted water, cook pasta until al dente according to package directions. Reserve ½ cup pasta water before draining.

4. To the skillet with tomatoes and feta, add cooked pasta, reserved pasta water and lemon zest (if using) and stir until combined. Garnish with basil and enjoy!

Healthy Baked Chicken Tenders with Honey Mustard Sauce

Healthy Baked Chicken Tenders

Sometimes there’s just nothing better than a simple, familiar meal at the end of the day. Baked to golden perfection, these chicken tenders and homemade dipping sauce are sure to be a hit amongst everyone – from adults to picky eaters. This Kid-Friendly Dinner Idea will make mealtime an easy breeze for you. 


3 large eggs beaten

1 cup almond flour

1 ½ tsp sea salt

1 tsp paprika

1 tsp onion powder

1 tsp garlic powder

A pinch of freshly ground pepper

1.5 lbs chicken tender meat

2 cups shredded unsweetened coconut

Homemade Honey Mustard Dipping Sauce:

½ cup dijon mustard

½ cup honey

3 tbsp mayonnaise 

1 tbsp brown mustard seeds

A pinch of salt and pepper

1. In a small bowl whisk together ingredients for honey mustard dipping sauce, set aside. Can be made ahead and stored for up to a week. 

2. Preheat the oven to 425 degrees F.

3. Pour the eggs into a shallow bowl. In a second bowl, whisk together almond flour, 1 teaspoon salt, paprika, onion powder, garlic powder and pepper, breaking up any clusters of almond flour. In a third bowl add the shredded coconut. 

4. Sprinkle the chicken tenders with remaining salt. Working with one chicken tender at a time, dip it into the eggs, then the almond flour mixture, back into the eggs and then finally into the coconut mixture. Continue with all chicken tenders and arrange on a lightly greased baking dish. 

5. Bake for 20 minutes until golden brown. Serve with honey mustard dipping sauce and enjoy!

Hawaiian Chicken Kabobs 

Low-Carb and Dairy & Gluten Free 

Serves: 8

Aloha! Don’t we all love a meal that’s sweet & savory? These kabobs are just that – a mix of juicy pineapple and tender grilled chicken. This is the perfect Kid-Friendly Dinner Idea for your family and friends to enjoy! 

Kabob Ingredients:

2 lbs. Boneless, skinless chicken breast, chopped into 1 ½ inch pieces

1-2 large sweet potatoes, peeled, cut into 1-inch pieces 

½ fresh pineapple, 1-inch cubed

2 small green bell pepper, large dice

1 medium red onion, large dice

2 tbsp. vegetable oil

(Optional) ¼ cup toasted flaked coconut 

(Optional) Coconut rice 


2 tsp. Sesame oil

1 tsp. Freshly grated ginger

2 large garlic cloves

⅓ cup low sodium soy sauce or tamari

1 tbsp. Rice vinegar

¼ cup brown sugar

¼ cup ketchup

½ tsp. Smoked paprika

1. Make the marinade: In a large bowl, whisk together all of the ingredients for the marinade. Scoop about half of the marinade into a smaller bowl and set aside for later use.

2. Add the chicken pieces to the marinade in the large bowl and toss until chicken is coated. Marinate the chicken in the fridge for at least 30 minutes or as long as 24 hours.

3. Add the sweet potatoes to a large pot, fill it with enough water to cover the potatoes and set over high heat. Once the water begins to boil, turn the heat down to medium until the potatoes are slightly softened, but not cooked through, about 5 minutes. Drain the potatoes.

4. Assemble the kabobs: Starting with the chicken, thread 8 skewers, see note, with a mixture of chicken, onion pieces, bell pepper, sweet potatoes and pineapple.

5. Heat a grill or grill pan to medium heat. Oil the grates. Grill the kebabs, using the reserved marinade for basting between each turn of the skewer. Grill for 2-3 minutes per side, about 10-15 minutes total, until the chicken is cooked through. 

6. (Optional) Serve warm over coconut rice, sprinkled with toasted coconut. 

Note: If using wood or bamboo skewers, plan ahead and soak them in water for at least one hour (or overnight) to prevent burning.
