Eat Your Vegetables! (It’s Easier Than You Think)

“I don’t like vegetables.” We hear kids say that all the time. But more than a few adults feel the same way. Are leafy greens really that necessary? How vital are they for our health?

Vegetables are packed with nutrients like potassium, antioxidants and Vitamins C and A. They can help you maintain healthy blood pressure, support healthy heart function, and boost your immune system. Veggies also contribute to healthy skin, teeth and gums. The United States Department of Agriculture (USDA) groups vegetables and fruits together. The USDA recommends eating between five and nine servings daily. The size of a serving depends on your age, sex and average level of physical activity. Whether they’re dark green or bright in color, vegetables have no substitute when it comes to their health benefits.

Believe it or not, you really can learn to love vegetables. With the variety of veggies available to you, and the number of ways you have to prepare them, you have more options than you may realize. Here are a few tips for making vegetables a bigger part of your daily diet:

Keep them within arm’s reach. We tend to snack on what’s nearby. So keep a container of baby carrots, celery sticks, broccoli and cauliflower florets, cucumber slices, sliced red, yellow or green pepper, and/or grape tomatoes in your refrigerator. Dip them in reduced-fat salad dressing, Greek yogurt or hummus.


Let them hog the plate. Veggies should make up at least half of your plate. If you’re eating pasta, lighten up your portion, but increase the vegetables. You can still top it off with red sauce, a touch of olive oil and a sprinkle of Parmesan or feta cheese. Your plate will still be full, and so will you.

Eat what’s in season. If you don’t like veggies, it may be because you’ve never eaten them fresh. If you have a farmer’s market in your community, give it a try. Eat a vegetable that’s just been picked, and you might just discover what you’ve been missing.


Throw it in. Add veggies to eggs, macaroni and cheese, casseroles, pizza, soup quesadillas, sandwiches and more.
